Every MiamiNuts box carries a QR code that opens a signed laboratory report. Most brands hope you never look at theirs; we would rather teach you to read ours like a food scientist — because once you can, you will start asking every snack brand the same four questions, and that is good for everyone.
First: what NABL actually means
NABL — the National Accreditation Board for Testing and Calibration Laboratories — does not test food. It audits the labs that do: their methods, instruments, calibration and staff, against the international standard ISO/IEC 17025. A result from an NABL-accredited lab means the measurement itself is trustworthy. That distinction matters: “lab tested” on a wrapper is meaningless if the lab is the company’s own back room. Look for the accreditation number and scope on the report header — ours is printed on every page.
The four panels that matter
A dry-fruit or makhana report will usually carry four families of tests. Here is what each is really asking:
1. Aflatoxins
The non-negotiable one. Aflatoxins are toxins produced by moulds that grow on nuts and grains stored damp — invisible, tasteless and genuinely harmful over time. FSSAI caps total aflatoxins in nuts at 15 µg/kg (ppb) with a lower cap of 10 µg/kg for aflatoxin B1. On the report you want to see either values far below the limit or “BLQ / not detected” — below the limit of quantification. This is the single line that makes fast, dry, tested supply chains worth paying for; we wrote about how ours works in the pond-to-pack piece.
2. Heavy metals
Lead, cadmium, arsenic, mercury — these arrive from soil and water, not handling, which is why where a crop grows matters. Limits are set per metal (lead in most foods: 2.5 mg/kg under FSSAI, far lower for many categories). Again: numbers well under the cap, or “not detected.”
3. Pesticide residues
Usually reported as a multi-residue screen covering dozens of molecules at once. The honest summary line is “none detected above MRL” — maximum residue limits. Makhana has a structural advantage here: the crop grows in ponds with minimal spraying, and the part you eat spends its life sealed inside a shell.
4. Moisture and microbiology
The freshness panel. Moisture percentage predicts crunch and shelf life (popped makhana should sit around 4–6%; higher, and it will chew, then stale). Yeast, mould and coliform counts tell you the packing line is clean. These numbers are why a report is per-batch, not per-year — they change with every roast.
Reading the numbers like a scientist
Three habits carry you through any report. Check the units — µg/kg (ppb) and mg/kg (ppm) differ a thousandfold, and confusing them makes safe numbers look scary. Compare against the printed limit, which any honest report states alongside the result; a value one-tenth of the cap is a good result, not a warning. Prefer “not detected” over silence — a report that omits a panel didn’t pass it, it skipped it.
And one habit for the brand, not the number: match the batch. The report’s batch code should equal the one printed on your pack. A framed certificate from 2023 on a website is decor; a report that matches the pack in your hand is proof.
