What is makhana?
Makhana, also called fox nut, is the seed of a water lily. The seeds are heated until they pop into light, crisp puffs, a little like popcorn, except it comes from a seed rather than a grain. We roast those puffs and season them. The taste is mild and toasty, so it carries salt, spice or a little sweetness well.
