Ask anyone in Darbhanga how makhana is popped and they will not describe a machine. They will describe sand — a black iron kadhai of it, smoking hot — and a sound: the flat thok of a wooden mallet meeting a roasted seed at exactly the right second. The method looks ancient because it is. It survives because, thermodynamically, it is very hard to beat.
The problem: a pressure vessel the size of a pea
A makhana seed is a kernel of starch and about 10–12% moisture sealed inside a shell hard enough to blunt a knife. To turn it into the white pop you snack on, you need to do two things almost simultaneously: superheat the moisture inside the kernel so it wants to become steam, and then release it fast enough that the kernel everts — bursts out of the shell and turns inside out — before the steam escapes quietly and the moment is lost.
Popcorn does this on its own; its shell fails at a convenient pressure. Makhana’s shell is far too strong to fail on its own. It has to be helped — struck — and the strike has to come while the inside is still at pressure. Popping makhana is popcorn with a deadline.
Why sand is the answer
Sand solves the heating half of the problem better than almost anything else:
- Temperature. A sand bath runs at roughly 250–300°C — far hotter than oil could safely go, and hot enough to superheat the kernel’s core in seconds.
- Contact. Sand flows around each seed and touches it everywhere at once. Conduction from all sides beats hot air (slow) and hot metal (one contact point, scorches).
- Forgiveness. Individual grains hold little heat, so the seed surface toasts without burning while the core catches up. It is the same reason street vendors roast peanuts and chana in sand.
- Honesty. Sand adds nothing. No oil is absorbed at this stage; the pop arrives naked, which is why the final seasoning can be so light.
The strike
Roasted seeds are pulled from the sand and rested briefly — enough for the shell to begin cooling and turn brittle while the core stays hot and pressurised. Then the popper works fast, striking each seed or a small handful with a wooden mallet. Timed right, the shell shatters, the kernel everts in a fraction of a second, and a matte white pop rolls free. Timed wrong — a few seconds late — the pressure has bled off and the kernel comes out dense, half-opened, chewy. Those are the misses you find at the bottom of cheap packs.

What this means in your bowl
Everything you like about good makhana traces back to this step. The airy shatter instead of a crumble: full eversion. The clean, faintly sweet base flavour: dry sand roast, no oil uptake. The uniform large pops: 6-suta seed, popped on time, sorted after. When we say our roasted makhana is “roasted, never fried,” the sand is where that starts — the seasoning pan later only ever sees a whisper of cold-pressed groundnut oil.
And the sand itself? Sieved, reused, and eventually retired — it never leaves the kadhai stage, and every batch that follows is lab-tested before it ships, so what reaches you is pop, salt, and nothing else.
Is makhana popped in the sand you eat?
No. Sand is only the roasting medium — like a pan, not an ingredient. Pops are winnowed and cleaned after popping, and every MiamiNuts batch is NABL lab-tested before shipping.
Why does some makhana feel chewy instead of crisp?
Usually a late or weak pop — the kernel everted partially — or moisture regained in storage. Large 6-suta seed popped on time, packed fast, stays shatter-crisp.
Can makhana be popped at home?
Practically, no — the seed needs a ~300°C roast and a precisely timed strike. Home pans can re-crisp already-popped makhana in 30 seconds, which is worth doing after a pack has been open.
